As canners its important to remember that wiping the lid ensures that there is not excess debris or oil on the rim that would preclude a successful seal. Wiping should be done with a clean paper towel that is dampened with either warm water or vinegar. When this is done, the results will be good. Failure to wipe rims could have adverse results and require additional processing or a lot of relish in your fridge
